Abstract:

The surveillance of vineyards, which may surprise us today, was of great importance in the past. This is reflected in the charters of Soria an Salamanca and other bylaws. These texts, together with other oral sources (sayings and songs), have allowed us to rescue from the the past an important chapter in the history of viticulture, which had its impact on rural economy and society since the Middle Ages to the 70s and 80s in the last century. We will try to explain why and how the vineyards were watched in the vine-growing regions of northern Spain and thus visualize an intangible heritage (voices, terms and patrimonial expressions) and materials (remains of structures associated with the surveillance of the vineyard) which can now be used as a resource for the development of wine tourism.

Key words: Vineyard, surveillance, landscape.
